Every Sunday, Mark cooks either pancakes or waffles (Julian calls them foo-fools) for dinner. He’s always tweaking the recipe or adding different flavors. He makes these great raspberry pancakes, and his lime pancakes were definitely his most unique!
This Sunday, I was kind of in the mood for Johnny cakes (cornmeal pancakes) but we were out of Jiff mix. So, Mark created his own, gluten-free, Johnny cakes recipe using polenta.
(Mark actually can’t eat gluten, but he makes regular, gluten-filled pancakes and waffles of goodness for the rest of us every week anyway. Best. Husband/dad. Ever.)
